Local Menu at Cipollina, Too

pizza.jpgWest Lynn bistro Cipollina is on the loca-wagon, too, with an ever-changing local menu that complements the regular one.  The chef shops the Austin farmers’ markets regularly for veggies and meats.  That’s where he met Sebastien Bonneau, the French fellow responsible for Countryside Farm in Cedar Creek.  On yesterday’s local menu, the lamb, rabbit, and pâté were all Sebastien’s.  I chose to stick with a pizza, though, and ordered the version topped with white truffle oil, rosemary, garlic, and Grana Padano cheese.  I asked the lady taking my order if there was anything local about it and she pointed out the window. “We get the rosemary from the bush right out there,” she said.  I couldn’t taste much in the way of truffle, but the rosemary flavor really shone through on this excellent, thin-crusted pizza.
