		<description>I am looking for a place to buy cheese of different types in bulk amounts. I can not use 300 lb barrels but could take 40 lbs or less down to 10 or 12  lb. amounts. At prices of less than $3.00a pound when by market reports show prices of $1.14 to $1.43 as prices.</description>

Here are some of my go-to sources for humanely raised meats:

BEEF - People's Pharmacy for Betsy Ross Beef (frozen, local, grass-fed); Austin Farmer's Market (downtown Saturday) for Fredericksburg grass-fed beef (also frozen and grass-fed), Wheatsville Co-op for Neiman (not local, but humane and not frozen which is nice if you're in a hurry)

PORK - Austin Farmer's Market (Triangle Wednesday) for Peach Creek Farm

FOWL - Austin Farmer's Market (downtown and Triangle) for Countryside Farms duck, chicken, and more (also rabbit!)

LAMB - Austin Farmer's Market (downtown) and Wheatsville for Loncito's Lamb

BISON - Austin Farmer's Market (both) for Thunderheart

Wheatsville is a great place to go if you just want to browse a nice selection of humanely raised stuff. The butcher there is extremely helpful and knowledgeable. 

Keep in mind that local meats often aren't technically certified humane (due to costs, time involved with certification), but usually *are* humane in practice. You can always ask. I'm a nosy journalist, and I've never yet had a local producer be anything other than gracious when I've asked about production methods. On the contrary, usually they're happy I've asked.
